Lessons from the Salmonella Outbreak
Op-Ed columnist for the New York Times, Nicholas Kristof,
highlights the terrible deficiencies and inherent cruelty of the egg
industry. The recent salmonella outbreak prompted a lot of people to
take a look at what we almost never see (or want to see): food
production. Egg laying hens, in industrial facilities, are
overcrowded in filthy environments that are very conducive to
salmonella, compared to small family farms where hens are raised
cage-free.

Cleaning the Henhouse
The salmonella outbreak is only one more reason to leave eggs off
of our plates. Compassion toward God's hens should be another, and
maybe our most important one as stewards of God's Creation.
