Purple Foods Are Healthy

Brightly pigmented fruits and vegetables are rich sources of vitamins, minerals and health-supporting plant chemicals, such as antioxidants that add color to foods. For example, carrots and oranges contain Carotene, which give them their color. Anthocyanin, on the other hand, produces the purple in some plums as well as peppers and grapes so dark that they appear to be black. Studies have shown that these phytochemicals may reduce your risk for coronary artery disease and some forms of cancer.
