Foie gras ban
The Chicago ban on foie gras took place on August 22nd and already
caused angry responses. What should be a cause of pride, for the cruelty
involved in producing it, has instead drawn so much attention that the
Illinois Restaurant Association and Allen’s Café filed a lawsuit
claiming that the ban violates the state constitution, supported by the
Chicago Chefs for Choice and the Artisan Farmers Alliance. The reason?
They are worried that this ban would cost $18 million annually in lost
sales, tax revenues and tips. Never mind that the issue of cruelty is
not even in question. Even a few chefs said they will serve foie gras
for free and charge for the accompanying dishes.
