Vegan Banana Bread

Ingredients
2/3 cups boiling water 2 tbsp ground flax
seed 2 cups organic whole wheat pastry flour 1 1/2 tsp baking
powder 1 tsp baking soda 1/3 cup Turbinado (What's this?)
1/3 cup agave nectar (What's this?) 1/3 cup coconut oil Pinch
of ground nutmeg 2 tablespoons unsweetened almond milk 3
medium ripe bananas, mashed 1/3 cup walnuts chopped finely
(optional) Preparation
- Pre-heat oven to 350° -
In a high-speed blender, whip together the flax seed and boiling
water for 20-30 seconds until it becomes gelatinous. This will be
your "eggs." - Sift together the flour, nutmeg, baking soda and
baking powder. Add sugar, agave nectar, coconut oil, almond milk,
and bananas. Mix thoroughly using a counter-top or hand-held mixer.
- Fold in walnuts if desired. Bake at 350° for about 45 minutes or
until you can stick in a toothpick and pull it out with nothing
sticking to it. It is yummy with a little almond butter on it or a
fruit spread.
You can also make vegan banana muffins by using
this batter with muffin baking tins. Pour each cup in the tin to
about 2/3 full and bake at 350° for about 35 minutes.
