Carrot Muffins

Serves 6 to 8


1 cup whole-wheat flour

1 cup oat bran

1 tablespoon cornstarch

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon all-spice

1/2 teaspoon cinnamon

2/3 cup grated carrots

1/3 cup maple syrup

1 cup water

1/4 cup canola oil


  • Preheat the oven to 375oF.
  • In a large mixing bowl, combine all of the dry ingredients (flour through cinnamon) and the grated carrots.
  • Add all of the wet ingredients, maple syrup through oil. Mix well.
  •  Pour the batter into a lightly oiled muffin pan and bake for 25 to 30 minutes, or until an inserted toothpick comes out clean.
